Testing a Healthy Breakfast Casserole Before ‘Company Season’

When the holidays roll around, it’s “company season” — that time of year when family and friends start showing up for long weekends, laughter, and lots of food. One of my favorite ways to keep mornings stress-free (and my kitchen from looking like a disaster zone) is by serving a breakfast casserole. It’s warm, filling, easy to prep ahead, and feeds a crowd without breaking a sweat.

This year, I wanted to find a healthy breakfast casserole that still feels cozy and satisfying, and I came across a great one on Pinterest. Of course, before company arrives, I like to give any recipe a test run — and let me tell you, this one’s going on the official holiday menu!

 

🥘 Healthy Breakfast Casserole Recipe

Ingredients:

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 1 red bell pepper, chopped

  • 1 cup fresh spinach, chopped

  • 1 cup mushrooms, sliced

  • 1 cup cooked turkey sausage or chicken sausage

  • 8 large eggs

  • ½ cup skim milk (or almond milk)

  • ½ teaspoon garlic powder

  • Salt and pepper to taste

  • 1 cup shredded cheese (cheddar, Swiss, or your favorite blend)

Instructions:

  1. Preheat oven to 375°F and lightly grease a 9×13 baking dish.

  2. In a skillet, heat olive oil and sauté onions, peppers, mushrooms, and spinach until tender.

  3. Add cooked sausage to the skillet and stir to combine.

  4. In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.

  5. Add the veggie and sausage mixture to the baking dish, pour egg mixture over top, and sprinkle with cheese.

  6. Bake for 30–35 minutes or until the center is set.

  7. Let cool slightly before serving.

This breakfast casserole checks all the boxes — it’s hearty, flavorful, and can be customized for your guests’ preferences. Want it dairy-free? Skip the cheese. Feeding vegetarians? Leave out the sausage and double up on veggies.

The best part about a breakfast casserole is that you can make it the night before. Just assemble everything, cover it, and refrigerate overnight. In the morning, pop it in the oven while you sip your coffee. Your guests will think you’ve been up for hours cooking. (We’ll let that secret stay between us!)
